Creamy broccoli cheese soup made with chicken broth, veggies, and velvety American cheese.
Ingredients:
  • 1 onion, chopped
  • 6 tablespoons margarine
  • 0.33333334326744 cup all-purpose flour
  • salt and pepper to taste
  • 4 cups milk
  • 3 cups chicken broth
  • 1 carrot, shredded
  • 1 cup broccoli florets
  • 0.5 cup chopped celery
  • 1 pound processed cheese food (eg. Velveeta), cubed
Instructions:
  • Saute tender onions in butter in a large saucepan over medium-high heat. Stir in flour, salt, and pepper until smooth. Gradually pour in milk until thick and bubbling.
  • In a small saucepan, bring the chicken broth to a boil. Add carrot, celery, and broccoli; cook for 5 minutes or until tender. Combine with the milk mixture and stir until well blended.
  • Stir in the cheese and let the soup heat over medium heat until melted. Be careful not to let it boil to prevent the cheese from separating. Serve piping hot and savor every spoonful!
