Cheese straws: the ultimate crowd-pleaser for family gatherings and celebrations with a satisfying crunch.
Ingredients:
  • 332.50 ml plain flour, sifted
  • 1.20 gm salt
  • 1/4 tsp cayenne pepper
  • 125g butter, chilled, chopped
  • 250g aged cheddar, grated (see notes)
  • 1 egg, lightly beaten
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line three large baking trays with baking paper.
  • In a bowl, mix together flour, salt, and cayenne pepper. Use your fingers to blend in the butter until the mixture has a breadcrumb-like texture. Then, add cheese, egg, and lemon juice, and knead the mixture with your hands until a dough forms (add more lemon juice if necessary).
  • Take half of the dough and place it onto a generously floured surface. Roll it out to create a 3mm-thick, 20cm x 40cm rectangle. Trim the edges to get them straight. Cut the dough crosswise into 5mm strips. Repeat these steps with the remaining dough and then place all strips on the prepared trays.
  • Bake one tray at a time for 10 to 12 minutes, until the edges just start to turn golden. Allow to cool on trays before serving.
