Classic Southern cheese straws: a delightful blend of cheese cracker and savory cookie, perfect for pairing with wine. Easy and delicious.
Ingredients:
  • 1 3/4 cups (228g) self-rising flour
  • 1/2 teaspoon smoked or sweet paprika
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1/4 teaspoon kosher salt
  • 1/2 pound sharp or extra-sharp cheddar cheese, freshly grated
  • 1 stick (1/2 cup) unsalted butter, room temperature
  • 1 to 4 tablespoons water, or as needed
Instructions:
  • Whisk together flour, paprika, cayenne, and salt in a medium bowl until combined.
  • Combine the freshly shredded cheese and softened butter in the bowl of a stand mixer or large mixing bowl. Beat on medium speed for about 2 minutes until well combined. Add the dry ingredients and mix on low speed. Gradually add water, a teaspoon at a time, until the dough forms a soft, non-sticky consistency, similar to play dough. Cover the dough with plastic wrap and let it rest while you preheat the oven.
  • Preheat the oven to 350°F and prepare 2 large sheet pans by lining them with parchment paper.
  • Prepare the cheese straws: After preheating the oven, use a cookie press with a large star disk to pipe the dough onto a baking sheet in 2- or 3-inch lines, leaving space between each straw. Alternatively, on a floured surface, roll out half of the dough into a 1/8-inch thick rectangle. Cut into 1/2-inch strips using a pizza cutter or knife. Twist the strips or leave them plain, then place on baking sheets. Repeat with the remaining dough.
  • Bake the cheese straws in the oven until they are golden brown on the bottom and light brown on top, about 15 minutes. If using 2 baking sheets, rotate them halfway through baking. Allow the cheese straws to cool on the pan. Handle them delicately when warm to prevent breakage. Let them cool completely before serving and store in an airtight container for up to a week.
