Cheese-stuffed meatloaf with bacon weave and pineapple glaze - a family favorite!
Ingredients:
  • 8 slices bacon, divided
  • 1 pound ground beef
  • 0.25 cup dry bread crumbs
  • 1 egg, beaten
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground black pepper
  • 1 cup shredded Cheddar cheese, or as needed
  • 0.33333334326744 cup ketchup
  • 0.25 cup brown sugar
  • 0.25 cup crushed pineapple, drained
Instructions:
  • Preheat the oven to a cozy 350 degrees F (175 degrees C) and chop up 4 bacon strips, keeping the remaining 4 strips for later.
  • In a large skillet over medium heat, cook the chopped bacon, stirring occasionally, until it's golden and crispy, for about 8 to 10 minutes. Remove the cooked bacon from the skillet and set it aside.
  • Gently combine ground beef, bread crumbs, egg, garlic, 1 teaspoon Worcestershire sauce, salt, and black pepper in a bowl until mixed well. Flatten meat mixture on waxed paper into a 10-inch square. Layer Cheddar cheese and cooked chopped bacon on top, leaving a 1/2-inch border. Roll meat around filling, then place seam side down in a loaf pan.
  • Bake the meat loaf in the preheated oven for around 30 minutes until heated through and starting to brown. In a bowl, combine ketchup, brown sugar, pineapple, and 1 teaspoon of Worcestershire sauce, stirring until the brown sugar dissolves. Take the meat loaf out of the oven and layer the remaining 4 strips of bacon in a woven pattern on top of the loaf. Spread the pineapple mixture over the woven bacon and the top of the loaf.
  • Continue baking the meatloaf until the bacon topping is crisp, the pineapple mixture turns into a tantalizing glaze, approximately 20 more minutes. Ensure that the meatloaf reaches an internal temperature of 160°F (70°C) when tested with an instant-read meat thermometer in the center.
