Cheeseburger casserole: Layers of macaroni, beef, veggies, and seasonings topped with gooey melted cheese for a comforting meal.
Ingredients:
  • 0.5 pound ground beef
  • 2 medium onions, chopped
  • 1 (28 ounce) can diced tomatoes with herbs, undrained
  • 0.5 cup water, or as needed
  • 2 cups elbow macaroni
  • 1 cup frozen corn
  • 1 green bell pepper, chopped
  • 2 tablespoons minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon chili powder
  • 1 teaspoon Italian seasoning
  • ground black pepper to taste
  • 2 cups shredded Mexican cheese blend
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 2-quart baking dish with cooking spray.
  • In a hot saucepan, sauté beef and onions until beef is browned and onions are translucent, for about 5 to 7 minutes. Remove excess fat.
  • Pour the liquid from canned tomatoes into a 4-cup measure; adjust with water to reach 2 1/2 cups. Combine with juice, tomatoes, macaroni, corn, bell pepper, garlic, soy sauce, chili powder, Italian seasoning, and pepper in the beef mixture; bring to a boil.
  • Layer half of the beef mixture in the baking dish, sprinkle 1 cup of cheese over it, then repeat the layers. Cover the dish and place it on a cookie sheet.
  • Bake in a preheated oven for 30 minutes. Then, bake uncovered until the pasta is al dente, about 15 minutes.
  • Allow the dish to cool for 10 minutes before enjoying.
