Indulge in a hearty skillet of beef, potatoes, cheddar cheese, tomatoes, and lettuce - a must-have meal!
Ingredients:
  • 1 lb potatoes, peeled, cut into sticks
  • 1 tablespoon canola oil
  • Dash salt
  • 1/2 lb lean (at least 80%) ground beef
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 1 cup loosely packed shredded lettuce
  • 6 grape tomatoes, quartered
  • 1/4 cup diced red onion
  • Ketchup
  • Mustard
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with parchment paper.
  • Submerge the potatoes in a bowl of cold water and let them sit for 5 minutes to remove excess starch. Drain the potatoes and pat them dry with paper towels. Wipe the bowl dry with paper towels. Return the potatoes to the bowl, mix with canola oil and a dash of salt, then spread them out evenly on a cookie sheet.
  • Bake for approximately 35 minutes until the potatoes are tender and golden brown on the bottom, then take them out of the oven.
  • Combine the beef, onion powder, garlic powder, 1/4 teaspoon of salt, pepper, and Worcestershire sauce in a bowl. Cook the beef in a heated 12-inch skillet, breaking it into large chunks with a spoon until seared and fully cooked. Transfer the beef to a paper towel-lined plate using a slotted spoon, while keeping the drippings in the skillet.
  • After baking the potatoes, preheat the oven to broil. Then, in a large cast iron or ovenproof skillet, create layers with half of the potatoes, beef, and cheese. Repeat the layers with the remaining potatoes, beef, and cheese.
  • Place the skillet under the broiler until the cheese is melted and bubbly, about 4 to 5 minutes. Remove from broiler and top with lettuce, tomatoes, and onion. Serve with ketchup and mustard.
