Cheesecake brownie

Indulge in decadent brownies as the perfect treat for surviving the week.
Ingredients:
  • 150g butter, chopped
  • 300g good-quality dark cooking chocolate, chopped
  • 215g (1 cup) caster sugar
  • 225g (1 1/2 cups) plain flour
  • 65g (1/4 cup) sour cream
  • 1 x 250g pkt cream cheese, at room temperature
Instructions:
  • Preheat your oven to 180°C. Use melted butter to brush a 20cm square cake pan, ensuring a light greasing. Line the base and 2 opposite sides with non-stick baking paper, allowing the paper to hang over the edges.
  • In a saucepan over low heat, melt the butter and chocolate together until smooth, stirring constantly for about 5 minutes. Remove from heat and let cool for another 5 minutes.
  • In a small bowl, beat 2 eggs. Stir in the beaten eggs and 140g (2/3 cup) sugar into the chocolate mixture. Mix in the flour and sour cream until fully combined.
  • In a bowl, use an electric beater to whip the cream cheese and sugar until smooth. Then, add the remaining egg and beat until just combined.
  • Pour the chocolate and cream cheese mixtures alternately over the base of the pan. Swirl with a skewer to achieve a beautiful marble effect. Bake in the oven for 30 minutes or until a skewer inserted into the center comes out clean. Let it cool in the pan for 1 hour. Cut into squares and enjoy!
