Indulge in a comforting fusion of beef goulash and cheesy pasta bake for a guaranteed hit meal.
Ingredients:
  • 9.20 gm olive oil
  • 500g beef mince
  • 70g (1/4 cup) tomato paste
  • 5.00 gm paprika
  • 80ml (1/3 cup) red wine
  • 400g can chopped tomatoes
  • 750ml (3 cups) chicken stock
  • 1 large sprig fresh rosemary
  • 2 dried bay leaves
  • 250g dried rigatoni pasta
  • 100g (1 cup) grated 3 cheese blend
  • Fresh continental parsley leaves, to serve
Instructions:
  • Preheat the fan-forced oven to 180°C (356°F). Lightly grease a 20 x 30cm baking dish.
  • In a large frying pan over high heat, heat the oil until shimmering. Cook the mince for 5 minutes, breaking up lumps with a wooden spoon, until it changes color. Add the tomato paste and stir to coat for 1 minute, then mix in the paprika for 30 seconds.
  • Pour the wine into the pan and let it simmer for 2 minutes until slightly reduced. Introduce the tomato, stock, rosemary, and bay leaves. Season the mixture. Transfer half into the prepared dish, add the dried pasta, and then pour in the remaining tomato mixture. Top it off with cheese and bake in the oven for 30-40 minutes until the cheese is golden and the pasta is tender. Let it rest for 5 minutes before serving. Garnish with fresh parsley.
