Try these festive Halloween nachos with Progresso® beans and chicken topped with flavorful salsa.
Ingredients:
  • 30 blue corn tortilla chips
  • 1 tablespoon vegetable oil
  • 1 orange bell pepper, cut into thin strips
  • 1 tablespoon butter or margarine
  • 2 cloves garlic, finely chopped
  • 1 1/2 cups shredded deli rotisserie chicken (from 2-lb chicken)
  • 1 cup drained rinsed Progresso™ black beans (from 15-oz can)
  • 2 cups shredded sharp Cheddar cheese (8 oz)
  • Fresh cilantro leaves and chopped green onions, if desired
  • Salsa, if desired
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with foil. Place tortilla chips on the sheet, slightly overlapping.
  • In a 10-inch skillet over medium heat, warm oil. Sauté bell pepper for 3 to 4 minutes until tender. Add butter and garlic, stirring until butter melts. Add chicken and cook for 2 minutes until heated through. Remove from heat; mix in beans. Season with salt and pepper to taste if desired.
  • Transform the chips into a crispy base for the flavorful chicken mixture. Generously layer the chicken mixture on top, sprinkle a generous amount of cheese, and let it bake until the cheese is beautifully melted. Finish with a refreshing touch of cilantro and onions, serving it with a side of zesty salsa for a burst of delicious flavors.
