Grilled chicken nachos with lime crema and cheese for a crowd-pleasing party snack.
Ingredients:
  • 4 tablespoons tequila
  • 4 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon chopped fresh cilantro
  • 0.25 teaspoon ground cumin, or more to taste
  • 0.25 teaspoon garlic powder, or more to taste
  • 0.25 teaspoon salt, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 large skinless, boneless chicken breasts, thinly sliced into cutlets
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 2 limes, zested
  • 1 splash heavy cream, or as needed
  • 2 (13 ounce) packages restaurant-style tortilla chips
  • 1 (8 ounce) package shredded pepper Jack cheese
  • 1 (8 ounce) package shredded Mexican cheese blend
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • Combine tequila, oil, lime juice, cilantro, cumin, garlic powder, salt, and cayenne in a bowl to create a flavorful marinade. Add the chicken slices to a plastic bag, pour in the marinade, and refrigerate for 30 minutes.
  • Combine sour cream, mayonnaise, lime zest, lime juice, and a splash of heavy cream in a bowl until smooth. Chill in the refrigerator.
  • Allow the chilled chicken to sit at room temperature for 10 minutes.
  • First, preheat your oven to a toasty 350 degrees F (175 degrees C). Then, fire up your outdoor grill to high heat and give the grate a light coating of oil.
  • Grill chicken until golden brown and cooked through, approximately 5 minutes per side.
  • Spread out the tortilla chips on two cookie sheets in a single layer. Combine the pepper Jack and Mexican cheese, then sprinkle half over the chips. Cut the grilled chicken into bite-sized pieces and spread evenly over the cheese. Finish by topping the chicken with the remaining cheese.
  • Cook in the preheated oven until the cheese is gooey, for about 10 to 15 minutes. Finish by drizzling lime crema over the nachos and adding a sprinkle of fresh cilantro.
