BBQ Chicken Nachos: Ideal for tailgating or camping, grilled in foil for easy prep and cleanup.
Ingredients:
  • For the nachos:
  • 8 ounces tortilla chips
  • 2 cups finely grated cheddar cheese
  • 1 cup chopped cooked chicken meat (a rotisserie chicken is great for this)
  • 1/4 cup BBQ Sauce
  • For the sour cream BBQ Sauce:
  • 1/2 cup sour cream
  • For the toppings:
  • 1 tomato, chopped, optional
  • 1/4 red onion, chopped, optional
  • 1 jalapeño, thinly sliced, optional
  • 1/2 bunch cilantro, chopped, optional
  • 1/2 avocado, chopped, optional
Instructions:
  • Preheat the grill on high for direct heat and begin prepping the ingredients while it heats up.
  • Combine the BBQ sauce with the chicken, ensuring it's well-coated, then set aside.
  • Combine the sour cream and BBQ sauce, then let it sit for flavors to meld.
  • Prepare the foil boats by folding and crimping the aluminum foil sheets to form boat shapes.
  • Create the nacho base by placing a layer of tortilla chips on the foil ensuring some exposure at the top. Sprinkle most of the cheese over the chips and add the BBQ sauce-coated cooked chopped chicken. Top with the reserved cheese.
  • Grill: Cook nacho boats on pre-heated grill for 5 to 10 minutes until cheese is melted and chips are lightly browned. If using a campfire, enclose nachos in foil or tent with foil for a delicious crispy alternative.
  • To serve, generously drizzle with tangy sour cream BBQ sauce and top with a vibrant mix of chopped tomato, red onion, jalapeño, and fragrant cilantro for a burst of flavors.
