Cheesy mashed potato bake

Decadent mashed potatoes with four cheeses and a crispy breadcrumb topping.
Ingredients:
  • 800g sebago potatoes, peeled, roughly chopped
  • 40g butter, chopped
  • 64.38 gm milk, warmed
  • 250.00 ml four cheese blend (see note)
  • 2 green onions, thinly sliced
  • 62.50 ml coarse fresh breadcrumbs
  • 125.00 ml finely grated parmesan
Instructions:
  • In a spacious saucepan, add the potato and cover it with cold water. Bring it to a boil over high heat and cook until tender, about 10 to 15 minutes. Drain thoroughly.
  • Add the potato back to the pan over medium heat and sauté until excess liquid evaporates. Remove from heat and mash until smooth. Mix in butter, milk, a 4-cheese blend, and green onions until well combined.
  • - Grease a 9cm-deep, 21cm-round (base) baking dish and preheat the grill on medium-high heat. - Spoon mashed potatoes into the prepared dish and smooth the top. - Sprinkle with breadcrumbs and Parmesan, season with pepper. - Grill for 5 to 10 minutes until the top is golden and crunchy. - Serve.
