Cheesy Roast Beef Hash Egg Bake

Transform leftover pot roast into a savory breakfast casserole by layering it with Bisquick, potatoes, cheese, and eggs, then baking it to perfection overnight for a delicious brunch dish.
Ingredients:
  • 1 cup Bisquick Heart Smart® mix
  • 2 cups milk
  • 6 eggs, slightly beaten
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 teaspoon kosher (coarse) salt
  • 1/2 teaspoon ground pepper
  • 1 cup diced leftover roast beef
  • 1 cup diced leftover potatoes
Instructions:
  • In a large bowl, whisk together Bisquick mix, milk, and eggs until smooth. Stir in the rest of the ingredients. Cover and refrigerate for at least 8 hours, but no more than 24 hours.
  • Preheat oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish, then pour the mixture into it.
  • Bake without a cover for around 1 hour, or until a toothpick inserted in the middle of the egg bake comes out clean. Cut into squares and savor every bite.
