Cheesy bell pepper bread - a delicious baked treat for your family.
Ingredients:
  • 1 loaf (1 lb) French bread
  • 3/4 cup shredded part-skim mozzarella cheese (3 oz)
  • 1/4 cup mayonnaise or salad dressing
  • 1/4 cup finely chopped roasted red bell peppers (from 7-oz jar), well drained
  • 1 tablespoon chopped fresh cilantro, if desired
  • 1/2 teaspoon ground cumin
  • 1 small onion, finely chopped (1/4 cup)
Instructions:
  • Preheat your oven to 400°F. Slice the bread loaf horizontally into 3 layers and then combine all the remaining ingredients in a small bowl.
  • Spread half of the delicious cheese mixture over the first layer of bread, then add the second layer and spread the rest of the cheese mixture on top. Place the third layer on top and press down gently but firmly.
  • Seal the loaf tightly in heavy-duty foil and bake for 15 to 20 minutes until hot. Slice and serve while warm.
