Cheesy smashed baked potatoes

Cheesy smashed baked potatoes: a quick, easy, and perfect side dish for any meal or occasion!
Ingredients:
  • 1kg pkt Baby Red Royale Potatoes*
  • 40g butter
  • 40.00 ml plain flour
  • 250ml milk
  • 120g cheddar cheese
  • 11.80 gm Dijon mustard
  • 1.25 gm smoked paprika
  • 40.00 ml finely chopped chives
Instructions:
  • Preheat your oven to 200°C and line a baking tray with parchment paper. Arrange the potatoes on the tray, spray with olive oil, season with your favorite seasonings, and roast for 30 minutes, turning occasionally, until they are tender.
  • Melt butter in a saucepan over medium heat until it bubbles. Sprinkle in flour and stir for 1 min until it forms a grainy mixture. Remove from heat. Pour in milk and whisk until smooth. Return to heat and cook for 5 mins until the sauce thickens. Remove from heat and stir in half of the cheddar. Add mustard, paprika, chives, and season to taste.
  • 1. Cut a small cross on the top of each potato using a sharp knife. Gently press down on each potato to slightly open them. Fill the cuts with the sauce and top with the remaining cheddar. Bake until golden brown, about 5-10 minutes.
