Cheesy Soy Burgers

Cheesy beef and veggie burger with soybeans, ready in 25 minutes. Perfect for a quick dinner!
Ingredients:
  • 1/2 cup plain fat-free yogurt
  • 2 teaspoons prepared horseradish
  • 1 can (15 oz) soybeans, drained, rinsed
  • 1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
  • 1/4 cup unseasoned dry bread crumbs
  • 2 medium green onions, finely chopped (2 tablespoons)
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 2 tablespoons fat-free egg product or 1 egg white
  • 4 burger buns, split, toasted
  • 4 slices tomato
  • 4 lettuce leaves
Instructions:
  • Combine the sauce ingredients in a small bowl and set it aside.
  • In a medium bowl, use a fork to perfectly mash the beans. Mix in the rest of the patty ingredients and form the mixture into 4 delicious patties.
  • Prepare a 10-inch nonstick skillet by spraying it with cooking spray. Cook the patties in the skillet over medium heat for about 10 minutes, flipping them once, until they are lightly browned.
  • Assemble burgers by placing patties, sauce, tomato slices, and lettuce on the bottom halves of the buns, then finish by covering them with the top halves of the buns.
