Create a gourmet BLT bacon burger with zesty avocado lime mash, tomato, and cheese.
Ingredients:
  • 2 small ripe avocados, halved, peeled, stones removed
  • 21.00 gm lime juice
  • 18.20 gm olive oil
  • 2 brown onions, thinly sliced
  • 1/2 x 500g pkt Rindless Short Cut Bacon Twin Pack
  • 4 bread rolls or hamburger buns, split
  • 4 slices tasty cheddar
  • Coles Brand Australian Superfood Leaf Blend, to serve
  • 1 large tomato, thinly sliced
  • 75g aioli
  • Cooked potato wedges, to serve
Instructions:
  • Preheat the grill on high heat and line a large baking tray with foil.
  • Mash the avocado and lime juice with a fork in a bowl, then season to taste.
  • In a large non-stick frying pan over medium-high heat, sauté the onion in hot oil, stirring frequently, for 7 minutes or until golden. Remove from the pan and transfer to a small bowl.
  • Fry the Primo Rindless Short Cut Bacon in batches in a hot pan for 2 minutes per side until golden and crispy. Place on a paper towel-lined plate and cover to stay warm.
  • Place the cut roll halves on the tray, cut-side up, and add a generous amount of cheese on top. Grill for 1-2 minutes until the cheese is melted and the rolls are toasted.
  • Assemble the roll bases on serving plates, layering with salad, bacon, onion, avocado mixture, tomato, and roll tops. Accompany with aïoli and potato wedges, if desired.
