Cherry Amish Friendship Bread Cupcakes with Buttercream Frosting

Romantic pink cherry cupcakes with creamy buttercream frosting, ideal for Valentine's Day and special celebrations.
Ingredients:
  • 1 cup Amish Friendship Bread Starter (see footnote for recipe link)
  • 1 cup vegetable oil
  • 0.5 cup milk
  • 0.5 teaspoon vanilla extract
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups all-purpose flour
  • 1 (3 ounce) package cherry Jell-O®
  • 0.5 cup vegetable shortening
  • 0.5 cup butter, softened
  • 4 cups sifted confectioners' sugar
  • 2 tablespoons milk
  • 0.5 cup white chocolate chips, or as needed
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a 24-cup cupcake pan with paper liners.
  • Combine the Amish friendship bread starter, eggs, vegetable oil, 1/2 cup milk, sugar, vanilla extract, baking powder, baking soda, salt, flour, and cherry gelatin powder in a mixing bowl until well mixed. Fill the cupcake cups with the batter.
  • Bake the cupcakes for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool before serving.
  • Using a large bowl, combine vegetable shortening and butter until fluffy using an electric mixer. Add vanilla extract. Gradually mix in confectioners' sugar, followed by milk, until frosting is light and fluffy. Frost cooled cupcakes and top with white chocolate chips, if desired.
