Cherry and raspberry Cointreau zabaglione

Elevate dessert with vibrant cherries and raspberries in classic Italian zabaglione.
Ingredients:
  • 300g cherries, pitted
  • 120g fresh raspberries
  • 3 egg yolks, at room temperature
  • 50.00 gm caster sugar
  • 50.00 ml Cointreau
Instructions:
  • Spread the cherries and raspberries in a shallow heatproof dish and preheat the grill to medium.
  • In a heatproof bowl, combine egg yolks, sugar, and Cointreau. Set the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water. Use a hand-held electric beater to whip until the mixture is thick, pale, and forms a ribbon trail when the beaters are lifted.
  • Drizzle the mixture over the cherries and raspberries and broil for 30-60 seconds until golden. Serve right away.
