Cherry and raspberry salad with rose syrup

Festive fruit salad in rich wine syrup.
Ingredients:
  • 200g cherries
  • 50g raspberries
  • 2 ripe white peaches, stoned, cut into wedges
  • 2 ruby plums, stoned, cut into wedges
  • 40.00 ml small round mint leaves
  • 250ml rose wine
  • 40.00 gm caster sugar
  • 2 whole star anise
  • 1 cinnamon stick
Instructions:
  • In a small saucepan over low heat, mix rose wine, sugar, star anise, and cinnamon stick. Stir for 2 minutes until sugar dissolves. Increase heat to high, boil for 3-4 minutes until syrup thickens slightly. Cool before using.
  • In a large bowl, mix together cherries, raspberries, peaches, and plums. Drizzle with warm syrup, cover with plastic wrap, and refrigerate for 3 hours to enhance the flavors.
  • Gently mix in the mint with the fruit, then divide the mixture evenly among serving bowls.
