Indulge in irresistible cherry slice treats.
Ingredients:
  • 250g (1 2/3 cups) plain flour
  • 125g (3/4 cup) icing sugar
  • 175g cold unsalted butter, chopped
  • 1 egg, lightly beaten
  • 240g (3/4 cup) cherry conserve
  • 150g frozen cherries, halved
  • 20g (1/4 cup) flaked almonds, roasted
  • 10.60 gm lemon juice
  • 200g (1 1/4 cups) blanched almonds
  • 180g caster sugar
  • 180g unsalted butter, softened
  • 1 tsp vanilla paste or extract
  • 1 lemon, zested
  • 3 eggs
  • 40.00 ml plain flour
Instructions:
  • Prepare your pan by greasing it and lining the base and sides with baking paper. Create the base by blending flour, 75g of icing sugar, butter, and 1/4 teaspoon of salt in a food processor until the mixture looks like crumbs. Add the egg and continue processing until large clumps form. Spread the mixture over the pan, and using an offset spatula or your hands, press it evenly over the base. Place it in the freezer for 15 minutes to firm up.
  • Preheat your oven to 190C fan-forced. While that's warming up, prepare the topping by blitzing almonds, 80g sugar, and 1/4 teaspoon salt in a food processor until finely ground. Then, add butter, vanilla, lemon zest, and the rest of the sugar before pulsing until combined. Follow by adding the eggs and flour and process until a smooth mixture forms. Transfer to a bowl and place in the freezer for 15 minutes until slightly firm.
  • Bake the base until golden, about 25 minutes. Let it cool for 5 minutes, then evenly spread with conserve. Spoon and spread the topping to cover by starting at the edges and working your way into the center to keep the conserve from moving. Arrange cherry halves, cut-side up, in rows on top. Turn off the fan function and bake for about 45 minutes until golden and firm (cover with baking paper if needed to prevent over-browning). Cool the dish in the pan.
  • Sprinkle flaked almonds over the slice. Sift the remaining 50g of icing sugar into a bowl and gradually mix in lemon juice until smooth. Transfer the icing into a paper piping bag and create a zigzag pattern over the slice. Alternatively, use a spoon to drizzle the icing over. Allow it to set for 15 minutes.
