Delicious bite-sized almond tarts topped with cherries are a sweet treat in miniature form.
Ingredients:
  • 12 small (individual) frozen pastry tart shells
  • 50g strawberry jam
  • 50g unsalted butter, softened
  • 50g caster sugar
  • 1 egg
  • 25g almond meal
  • 25g self-raising flour
  • 1/2 tsp almond essence
  • 100g icing sugar
  • 6 glace cherries, halved
Instructions:
  • Preheat the oven to 200°C.
  • Place tart shells on a baking tray and fill each with a dollop of jam. In a bowl, beat butter and sugar until fluffy, then mix in the egg. Stir in almond meal, flour, and almond essence until well combined. Spoon mixture into shells, bake for 12-15 minutes, then cool.
  • Sift icing sugar into a bowl and mix with 1 tablespoon of water until smooth. Drizzle the icing over the cooled tarts and add a cherry half on top.
