Indulge in summer's cherries with decadent white chocolate brownies.
Ingredients:
  • 100g butter, chopped
  • 180g white chocolate, chopped
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 112.50 gm self-raising flour, sifted
  • 187.50 ml plain flour, sifted
  • 175g canned cherries
  • Icing sugar mixture, to dust
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm rectangular slice pan and line it with baking paper, leaving a 2cm overhang on all sides. In a medium saucepan over medium-low heat, melt butter and chocolate. Take off the heat and let it cool for 5 minutes.
  • Combine sugar, eggs, and flours in a pan. Stir until well mixed. Spread the thick mixture into a prepared pan (it may appear split). Press cherries into the mixture. Bake for 30 minutes or until edges are firm and the top is golden. Cool in the pan, then dust with icing sugar before serving.
