Cherry chard wild rice

Ingredients:
  • 150 g mixed wild rice
  • 200 g mixed-colour chard
  • 60 g dried sour cherries
  • 20 g shelled unsalted walnut halves
  • 40 g feta cheese
Instructions:
  • Cook the rice in boiling salted water following the package instructions. Trim chard stalks, place in a colander, cover, and steam above the rice for 3 minutes. Add the leaves and steam for 2 minutes more, then set aside. Mix finely chopped cherries with 1 tablespoon each of red wine vinegar and rice cooking water, and 1 tablespoon of extra virgin olive oil in a large bowl. Slice the walnuts, chard stalks, and shred the leaves. Drain the rice, add it to the cherry dressing bowl along with chard and crumbled feta. Toss to combine, season with salt and pepper. Serve and sprinkle with walnuts.
