Irresistible coconut cherry chews.
Ingredients:
  • 150g self-raising flour
  • 40g plain flour
  • 150g icing sugar mixture
  • 125g butter, melted
  • 175g caster sugar
  • 2.00 gm baking powder
  • 2 eggs, lightly beaten
  • 45g desiccated coconut
  • 100g glace cherries, chopped
Instructions:
  • Preheat the oven to 180°C. Lightly grease a 16cm x 26cm slab pan and line it with non-stick baking paper.
  • Combine the sifted flours and icing sugar in a bowl. Mix in the butter until fully combined. Press the mixture into the pan to form the base.
  • Mix all the remaining ingredients in a bowl, spread over the base, and bake for 35 minutes. Allow it to cool before cutting into squares to serve.
