Whip up a scrumptious cherry coconut slice for a delightful family dessert.
Ingredients:
  • 100g butter, softened
  • 220g caster sugar
  • 3 eggs
  • 150g plain flour
  • 160g jam
  • 400g can pitted black cherries, drained, halved
  • 150g shredded coconut
  • 80g desiccated coconut
Instructions:
  • Preheat your oven to 180C. Grease and line a 19cm x 29cm slice pan with baking paper, ensuring a slight overhang on the long sides.
  • In a bowl, use an electric mixer to blend butter and half the sugar until light and creamy. Mix in 1 egg until combined. Fold in the flour until just mixed. Transfer the batter into the pan and level the top with a spoon. Bake until golden brown, around 20 minutes.
  • Evenly spread the jam on the base, then arrange the cherries on top. Whisk the remaining eggs and sugar with a fork in a medium bowl. Mix in the coconut and sprinkle the mixture over the cherries. Bake for 25-30 minutes until lightly golden. Let it cool in the pan, then cut into squares to serve.
