Cherry coconut fudge

Delicious cherry coconut fudge bites.
Ingredients:
  • 2 x 100g packets red glace cherries
  • 180.00 gm brown sugar
  • 55.60 gm glucose syrup
  • 125g butter, chopped
  • 180g dark chocolate, finely chopped
  • 21.45 gm shredded coconut
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • Begin by finely chopping half of the cherries. Then, cut the remaining cherries in half. Next, combine the condensed milk, sugar, syrup, and butter in a saucepan over low heat. Stir the mixture continuously for 10 minutes, ensuring it becomes glossy and the sugar fully dissolves, without allowing it to come to a boil.
  • Turn the heat down to medium-low and let the mixture simmer while stirring. Keep stirring constantly and cook for 6 to 8 minutes until the mixture thickens and pulls away from the side of the pan. Take the pan off the heat and mix in the chocolate, chopped cherries, and coconut until the chocolate is melted and everything is combined. Transfer the mixture into the prepared pan, smoothing out the top. Gently press halved cherries, cut side-down, into the top. Let it sit for 30 minutes, then cover with plastic wrap and refrigerate for at least 6 hours until firm.
  • Cut into elegant 2.5cm pieces and present beautifully.
