Ingredients:
  • 225.00 gm self-raising flour
  • 215.00 gm caster sugar
  • 85.00 gm desiccated coconut
  • 270ml coconut milk
  • 2 eggs
  • 150g cherry
  • 13.60 gm desiccated coconut, extra
Instructions:
  • Preheat your oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 10cm x 20cm loaf pan, then line the base and sides with baking paper, leaving a 2cm overhang on the long ends.
  • Sift flour into a large bowl, then add sugar and coconut, stirring to combine. In a separate jug, whisk together coconut milk, eggs, and vanilla until well combined. Gently fold this mixture into the flour mixture. Add cherries and fold them in. Spoon the batter into a prepared pan, smoothing the surface, and finish by sprinkling some extra coconut on top.
  • Bake for 1 to 1 1/4 hours or until a skewer inserted in the center comes out clean. Let it rest in the pan for 10 minutes, then transfer to a wire rack to cool. Serve when ready.
