Easy and delicious cherry hand pies using puff pastry, perfect for any time of year. A delightful treat to enjoy and share with others.
Ingredients:
  • 1 pound fresh or frozen pitted, whole sweet cherries, thawed if frozen
  • 1/3 to 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 lemon, zested and juiced
  • 1 large egg + 1 tablespoon water
  • 1 (17-ounce) package puff pastry, thawed
  • Coarse decorating sugar, optional
Instructions:
  • Preheat the oven to 450°F and prepare a baking sheet lined with parchment paper.
  • Prepare the cherry filling: In a colander over a bowl, mix cherries, 1/3 cup sugar, cornstarch, lemon zest, and juice. Stir well and let it sit for 15 minutes to allow excess juice to drain, ensuring the filling is perfectly thickened. Don't fret, there will be ample cherry juice remaining! Taste after 15 minutes and sweeten with more sugar if desired.
  • Prepare the puff pastry: Unroll one portion of puff pastry and gently press it to an even thickness. Cut it into 6 rectangles and place them on a baking sheet lined with parchment paper. Repeat with the second sheet of puff pastry, cutting it into matching pieces.
  • Prepare the hand pies: Add approximately two tablespoons of cherry filling onto each puff pastry rectangle on the baking sheet. Place a second pastry rectangle on top and seal the edges using a fork. Make 2-3 slashes on the top of each pie. Brush with an egg wash and sprinkle with coarse sugar if desired.
  • Chill the pies in the freezer for 15 to 30 minutes to set the filling before baking to prevent it from bursting. Alternatively, tightly wrap the pies in plastic wrap and freeze for up to 3 months before baking.
  • For perfectly golden and puffy hand pies, take them out of the freezer and place them directly in the oven. Bake at 375°F for 13 to 15 minutes, remembering to rotate the pan halfway through. If baking frozen hand pies, simply extend baking time by an extra 5 to 6 minutes.
  • Cool and enjoy: Allow the hand pies to cool before indulging. Refrigerate any leftovers in an airtight container for up to a few days.
