Cherry ice-cream two ways

Indulge in dual versions of delightful cherry ice cream.
Ingredients:
  • 500g cherries, pitted
  • 1L brand vanilla ice-cream, softened slightly
  • 3 dark Tim Tams, crushed
  • 1L Brand chocolate choc chip ice cream, softened slightly
Instructions:
  • Purée half of the cherries in a food processor until smooth. In a chilled 1-litre dish, spread one third of the vanilla ice cream into a rough layer. Drizzle with half of the cherry purée and sprinkle half of the crushed biscuits on top.
  • Add another decadent layer of creamy ice-cream, generously drizzle with the rest of the luscious cherry purée, and top it off with the remaining crunchy crushed biscuits. Finish with one last layer of irresistible ice-cream. Cover with plastic wrap and allow to set in the freezer for 4 hours, or until perfectly firm.
  • - Chop the remaining cherries. - Spoon the ice-cream into a large chilled bowl and mix in the cherries with a large metal spoon. - Transfer the mixture into a chilled 1-liter capacity dish, press it firmly, and smooth the surface. - Cover with plastic wrap and freeze for 4 hours or until firm.
