Cherry iced tea mocktail

Fruity iced tea mocktail, perfect on its own or as a mixer.
Ingredients:
  • 2 oranges
  • 2 English Breakfast tea bags
  • 2 tablespoons caster sugar
  • 500 g cherries
  • 1 tablespoon apple cider vinegar
  • runny honey optional
Instructions:
  • Peel the zest of 1 orange into a heatproof jug or pitcher. Add tea bags, 1 tablespoon of sugar, and 600ml of just-boiled water. Stir and steep for 5 minutes. Remove the tea bags, pour in 500ml of cold water, then let it cool to room temperature before chilling in the fridge for at least 1 hour. For the cherry syrup, wash and pit the cherries, then combine with remaining sugar and juice of the orange in a saucepan. Simmer for 10 minutes until soft and syrupy. Mash the cherries and strain through a sieve into a bowl. Cool completely. When ready to serve, mix the cherry syrup and apple cider vinegar into the iced tea. Adjust sweetness with honey if desired. Serve over ice with orange slices in tall glasses.
