Delicious cherry-infused twist on Canadian Nanaimo bars.
Ingredients:
  • 0.5 cup butter
  • 0.25 cup white sugar
  • 0.33333334326744 cup unsweetened cocoa powder
  • 1 egg, lightly beaten
  • 1.75 cups graham cracker crumbs
  • 0.5 cup shredded coconut
  • 0.33333334326744 cup finely chopped walnuts
  • 0.25 cup butter, softened
  • 2 cups confectioners' sugar
  • 2 tablespoons maraschino cherry juice
  • 1 teaspoon almond extract
  • 0.33333334326744 cup chopped maraschino cherries, well drained
  • 1 tablespoon butter
  • 0.33333334326744 cup semisweet chocolate chips
Instructions:
  • Melt 1/2 cup of butter in a saucepan over medium heat with white sugar and cocoa powder. Stir until butter melts, about 2 minutes. Take the saucepan off the heat and mix in the beaten egg. Put the saucepan back on the stove and cook until the cocoa mixture thickens slightly, about 3 minutes. Remove from heat.
  • Combine graham cracker crumbs, coconut, and walnuts with the cocoa mixture, then firmly press the mixture into a non-greased 9x9-inch baking pan.
  • Cream together 1/4 cup butter, confectioners' sugar, cherry juice, and almond extract using an electric mixer until smooth. Fold in cherries. Spoon cherry mixture over the base layer and spread evenly. Allow it to set for about 10 minutes until slightly firm, then gently smooth the top layer with your hand.
  • In a small saucepan over low heat, melt 1 tablespoon of butter. Add chocolate chips and stir until melted and smooth, approximately 3 minutes. Pour the chocolate mixture over the middle layer and quickly smooth it with the back of a spoon. Chill for about 30 minutes before cutting into bars.
