Cherry almond treats with a rich flavor boost from ground almonds and amaretto liqueur.
Ingredients:
  • 1 cup softened butter
  • 2 cups powdered sugar, divided, or more as needed
  • 0.5 cup white sugar
  • 0.25 cup finely chopped maraschino cherries
  • 3 tablespoons amaretto liqueur
  • 2 tablespoons tart cherry juice concentrate
  • 1 teaspoon almond extract
  • 1 cup ground almonds
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare 2 baking sheets with parchment paper.
  • In a large bowl, cream together butter, 1 cup powdered sugar, and white sugar using an electric mixer until smooth. Add cherries, amaretto liqueur, cherry juice concentrate, vanilla extract, and almond extract, then mix well. Fold in ground almonds until fully incorporated.
  • In a separate bowl, mix flour and salt. Add this to the butter mixture and blend until fully combined. Roll the dough into 1 1/2-inch balls and place them on the baking sheets, leaving space between each as the cookies will expand while baking.
  • Bake in the preheated oven for 20 minutes or until edges turn golden. Let cool on baking sheets for 10 minutes before serving.
  • After the cookies have cooled, pour the remaining 1 cup of powdered sugar into a bowl. Dip each cookie into the powdered sugar until fully coated, then place them on a wire rack to cool completely.
