Elevate your breakfast with easy-to-make cherry almond granola featuring delicious crunchy vanilla crumbles for a perfect salty-sweet twist.
Ingredients:
  • For the vanilla crumbles (makes about 1 cup of crumbles):
  • 6 tablespoons instant nonfat dry milk (such as Carnation )
  • 1/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 3 tablespoons melted butter
  • 1 tablespoon vanilla extract, or the 1 vanilla bean, seeded and scraped
  • For the granola:
  • 3 cups old-fashioned rolled oats, divided
  • 3 tablespoons oil
  • 2 tablespoons maple syrup
  • 1/3 cup brown sugar
  • 1 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup slivered almonds
  • 3/4 cup dried cherries
Instructions:
  • Preheat the oven to 250°F.
  • Combine the dry ingredients (powdered milk through salt) in a bowl. Add scraped vanilla bean seeds if using. If using vanilla extract, mix it with melted butter. Gradually pour the butter over the dry ingredients while mixing with a fork until clumps form and all dry ingredients are incorporated. The mixture should resemble sandy gravel with pieces no larger than a pea.
  • Spread the crumbles evenly on a parchment-lined baking sheet. Bake at 350°F for 25 minutes until dry but still pale. Cool completely on the sheet before storing in an airtight container for up to a week, or mix into granola.
  • Preheat the oven to 325°F.
  • Prepare the granola mixture: In a medium bowl, mix together oil, syrup, sugar, extracts, cinnamon, and salt. Add oats and almonds, ensuring they are fully coated (save dried cherries for later).
  • Bake the granola until golden: Spread the mixture evenly on a parchment-lined baking sheet. Bake for 10 minutes, then stir. Continue baking for 10 more minutes, stir again, and bake for an additional 5-7 minutes until dry and golden. Remove from oven and cool completely.
  • Incorporate: After the granola has cooled, mix in cherries and vanilla crumbles. Place in an airtight container at room temperature for 2 weeks. Alternatively, store the vanilla crumbles separately at room temperature, covered, for up to two weeks, while the granola stays fresh for 1 month. Enjoy over yogurt with sliced bananas and a honey drizzle.
