Indulgent cherry-chocolate bread with flavors of a cherry cordial. Perfect for a delightful baked treat.
Ingredients:
  • 1 teaspoon unsalted butter
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 cup white sugar
  • 0.25 cup plain yogurt
  • 0.25 teaspoon vanilla extract
  • 2 cups pitted cherries
  • 0.5 cup dark chocolate chunks
  • 0.5 cup chopped walnuts
  • 0.25 cup powdered sugar
  • 3 teaspoons milk, or more as needed
Instructions:
  • Preheat the oven to 350°F (175°C), then butter a 9x4-inch loaf pan with 1 teaspoon of butter.
  • Combine the flour, salt, baking powder, and baking soda in a bowl, whisking until well mixed.
  • In a separate bowl, combine 1/2 cup butter and sugar until smooth and creamy using a spatula or electric mixer. Add eggs one at a time, fully incorporating each before adding the next. Mix in yogurt and vanilla extract.
  • Coarsely chop the pitted cherries with a knife or pulse them a few times in a food processor. Add to the wet ingredients along with chocolate chunks and chopped walnuts. Stir briefly to combine - don't worry if the batter looks curdled.
  • Combine the flour mixture into the batter while stirring until fully incorporated. Pour the batter into the loaf pan, ensuring a smooth and even top with no gaps in the corners. Gently tap the pan on the counter to remove any air bubbles.
  • Bake in the preheated oven for about 1 hour until golden brown and a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 15 minutes before transferring to a wire rack.
  • Mix powdered sugar and milk in a bowl until you achieve a smooth, thin icing consistency, adding more milk as necessary.
  • Generously coat the loaf with icing, letting it cascade down the sides. Allow it to cool thoroughly before cutting and serving, for approximately 20 more minutes.
