Upgrade your breakfast with a delicious banana coffee cake featuring crunchy cereal throughout.
Ingredients:
  • 2 cups Wheat Chex™ or Multi-Bran Chex™ cereal
  • 1 cup orange juice
  • 1/4 cup vegetable oil
  • 2 small bananas, thinly sliced
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup raisins, if desired
  • 1/2 cup Wheat Chex™ or Multi-Bran Chex™ cereal
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped nuts
  • 1/4 cup Gold Medal™ all-purpose flour
  • 2 tablespoons butter or margarine, softened
  • 1/2 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 350°F. Grease an 8-inch square pan. In a large bowl, combine 2 cups cereal with orange juice; allow to sit for about 2 minutes until cereal softens. Add oil, bananas, and egg. Mix in flour, sugar, raisins, baking soda, cinnamon, and salt. Spread mixture in the pan.
  • Bake for around 45 minutes or until the top is springy to the touch. While baking, roughly crush 1/2 cup of cereal and combine with the rest of the streusel topping ingredients until crumbly. Sprinkle the mixture evenly over the warm cake.
  • Preheat broil setting in the oven. Broil cake on top rack, about 5 inches from heat, for about 1 minute until bubbly. Keep a close eye to prevent burning. Serve the cake warm.
