Fruit and Nut Bread with Browned Butter Glaze

Indulge in our delectable fruit and nut bread made with Multi-Bran Chex® cereal and topped with a rich browned butter glaze.
Ingredients:
  • 2 1/4 cups Multi-Bran Chex™ cereal
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/3 cups milk
  • 1/4 cup canola oil
  • 1/3 cup dark molasses
  • 1/2 cup chopped walnuts
  • 3/4 cup diced dried fruit and raisin mixture
  • 1 tablespoon butter (do not use margarine)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 teaspoons water
Instructions:
  • Preheat oven to 375°F. Grease an 8x4-inch loaf pan with cooking spray, then lightly dust with flour. Crush cereal by placing it in a resealable plastic bag or between sheets of waxed paper and using a rolling pin until coarsely crushed.
  • Combine crushed cereal, flours, baking powder, pumpkin pie spice, and salt in a large bowl. Add egg, milk, oil, and molasses, stirring until just combined. Mix in walnuts and dried fruit, then transfer mixture to a pan.
  • Bake for 45 to 55 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 30 minutes, then transfer to a cooling rack. Let it cool completely, approximately 1 hour.
  • In a 1-quart saucepan, melt butter over gentle heat until it turns a rich golden brown, stirring occasionally. Take off the heat and whisk in the rest of the glaze ingredients until velvety smooth. Pour the luscious glaze over the loaf.
