Effortless weeknight meal: roasted chicken thighs with apples, pancetta, Brussels sprouts in fragrant herbs and olive oil.
Ingredients:
  • 2 cups Brussels sprouts, halved
  • 1 red apple, cut into 1-inch cubes
  • 1 (4 ounce) package pancetta
  • 2 tablespoons olive oil, divided
  • 1 teaspoon minced fresh rosemary
  • 6 skinless, boneless chicken thighs
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Coat Brussels sprouts, apple, and pancetta in 1 tablespoon of olive oil and rosemary in a bowl, then arrange on a sheet pan in a single layer.
  • Make room on the pan for the chicken thighs. Coat the chicken with the remaining 1 tablespoon of oil in the same bowl and then place it on the sheet pan. Sprinkle salt and pepper over the chicken.
  • Roast in the oven, tossing the Brussels sprouts every 15 minutes, until the chicken is cooked through and the juices are clear, for 40 to 45 minutes. Verify the chicken's doneness by ensuring an internal temperature of at least 165 degrees F (74 degrees C).
