Add crispy texture with toasted walnuts in this delectable chicken salad.
Ingredients:
  • 2 skinless chicken breast fillets
  • 20.00 gm Cajun seasoning*
  • 2 red apples
  • Juice of 1 lemon
  • 80.00 gm (1/3 cup) creme fraiche
  • 28.60 gm honey
  • 20.00 ml white wine vinegar
  • Baby salad leaves (such as watercress and rocket), to serve
  • Toasted walnut pieces, to garnish
Instructions:
  • Preheat your oven to 180°C. Season the chicken with flavorful Cajun seasoning, then bake on a lightly oiled tray for 15 minutes until perfectly cooked. Let it cool before serving.
  • Prepare the apples by slicing them and gently tossing them in 1 tablespoon of lemon juice. In a bowl, combine creme fraiche, honey, vinegar, 1 tablespoon lemon juice, and season to taste. Whisk everything together until smooth, gradually adding warm water until the mixture reaches a thin cream consistency.
  • Arrange thinly sliced chicken on plates alongside crisp apple slices and vibrant salad leaves. Drizzle the ensemble with a delectable dressing and scatter with crunchy walnuts for a delightful finishing touch.
