Creamy chicken alfredo with veggies and cream cheese sauce.
Ingredients:
  • 6 ounces dry fettuccine pasta
  • 1 (8 ounce) package cream cheese
  • 6 tablespoons butter
  • 0.5 cup milk
  • 0.5 teaspoon garlic powder
  • salt and pepper to taste
  • 2 skinless, boneless chicken breast halves - cooked and cubed
  • 2 cups chopped fresh broccoli
  • 2 small zucchini, julienned
  • 0.5 cup chopped red bell pepper
Instructions:
  • Bring a generously salted pot of water to a vigorous boil. Add pasta and cook until al dente, about 8 to 10 minutes. Drain well.
  • As the pasta cooks, gently melt cream cheese and butter in a skillet on low heat until velvety. Add milk, then season with garlic powder, salt, and pepper. Simmer for 3 minutes until lusciously thick, stirring constantly.
  • Combine the chicken, broccoli, zucchini, and red pepper in the pan. Sauté over medium heat for 3 minutes, then lower the heat and simmer for an additional 5 minutes until the vegetables are tender. Serve the mixture over cooked fettuccine.
