Whip up a flavorful chicken and kale soup for a satisfying and healthy meal.
Ingredients:
  • 1l chicken stock
  • 2 chicken marylands (or 4 drumsticks)
  • 2 potatoes, peeled, cut into 2cm pieces
  • 2 large carrots, peeled, cut into 1cm pieces
  • 1 leek, white part only, halved lengthways, thinly sliced
  • 6 garlic cloves, crushed
  • 60g kale leaves
  • 1/2 lemon, juiced
  • Extra virgin olive oil, to serve
  • Ground smoked paprika, to serve
Instructions:
  • In a large saucepan, combine stock and chicken, bringing it to a boil. Stir in potato, carrot, leek, and garlic, then simmer for 30 minutes.
  • Lower the heat and set the chicken aside to cool slightly. Remove and discard the skin and bones, then shred the chicken coarsely.
  • Add the chicken back into the soup along with the kale and lemon juice. Allow it to come to a boil, then let it simmer for 5 minutes to heat everything through.
  • Divide the soup into individual bowls. Add a swirl of olive oil and a sprinkle of paprika on top.
