Easy and decadent baked chicken Alfredo casserole with broccoli - a quick meal without the hassle.
Ingredients:
  • 1.5 cups cottage cheese
  • 1.5 cups evaporated milk
  • 3.5 ounces freshly grated Parmesan cheese
  • 0.25 teaspoon granulated garlic
  • 1 pinch ground white pepper
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 1 pinch freshly ground black pepper
  • 3 cups uncooked rotini pasta
  • 1 cup chicken broth
  • 1 cup chopped broccoli
  • 1 (6 ounce) skinless, boneless chicken breast, cubed
  • 0.5 teaspoon Italian seasoning
  • salt and freshly ground black pepper to taste
  • 0.25 cup freshly grated Parmesan cheese
Instructions:
  • Combine cottage cheese and evaporated milk in a high-powered blender like Vitamix; blend until smooth for about 30 seconds.
  • Combine the cottage cheese mixture in a saucepan over medium-high heat. Incorporate Parmesan cheese, garlic, and white pepper. Cook, stirring regularly, until the sauce thickens, for about 15 to 20 minutes. Add parsley and set aside for the casserole.
  • Preheat the oven to 375°F (190°C) for perfect cooking temperature.
  • Melt butter in an 8x8-inch baking dish by microwaving on Medium for about 30 seconds.
  • Combine minced garlic, 1/2 teaspoon of salt, and a pinch of black pepper with melted butter. Spread rotini pasta evenly in the dish and pour chicken broth over it. Top with chopped broccoli.
  • Season the cubed chicken pieces with aromatic Italian seasoning, salt, and pepper. Layer the seasoned chicken on top of the vibrant broccoli. Generously drench the casserole with creamy Alfredo sauce. Seal in all the flavors by tightly covering it with aluminum foil.
  • Cook in the preheated oven until the pasta is perfectly tender, for approximately 50 minutes.
  • Uncover the casserole dish, generously sprinkle with Parmesan cheese, and broil on high until golden, which should take about 2 minutes.
