Family-friendly DIY chicken burgers for a fun and easy dinner option.
Ingredients:
  • 500g chicken breast
  • 3 garlic cloves, crushed
  • 3 tsp dried oregano
  • 65.63 gm lemon juice
  • 18.40 gm rice bran oil
  • 2 large brown onions, halved, thinly sliced
  • 44.00 gm sweet chilli sauce
  • 6 multigrain bread rolls, split, toasted
  • Lettuce leaves, to serve
  • Sliced tomato, to serve
  • Cucumber ribbons (see note), to serve
Instructions:
  • Cut each chicken breast diagonally into 4 slices. Mix the chicken, garlic, oregano, lemon juice, and 3 teaspoons of oil in a bowl. Season with pepper. Cover and refrigerate for 20 minutes.
  • Heat the remaining oil in a non-stick frying pan over medium-low heat. Sauté the onion until softened, about 10 minutes, stirring occasionally. Stir in sweet chili sauce and cook for an additional 3 to 5 minutes until the onion is golden and caramelized.
  • Preheat a chargrill or barbecue plate over medium-high heat. Grill chicken for 4 to 5 minutes on each side until it is nicely browned and fully cooked.
  • Layer lettuce, tomato, cucumber, chicken, and onion mixture on roll bottoms. Finish with roll tops. Serve and enjoy!
