Chicken Caesar salad boats

Elegant Chicken Caesar salad served in lettuce cups.
Ingredients:
  • 510.00 gm chicken style liquid stock
  • 1 lemon, sliced
  • 2 bay leaves
  • 500g chicken breast fillets, trimmed
  • 9.20 gm olive oil
  • 175g rindless shortcut bacon, finely chopped
  • 24 small cos lettuce leaves (see note)
  • 131.25 gm Caesar salad dressing
  • 75g parmesan cheese, thinly shaved
Instructions:
  • In a deep frying pan, mix stock, lemon, and bay leaves. Simmer over medium heat. Add chicken, cover, and simmer for 10 to 12 minutes until chicken is cooked through. Transfer chicken to a plate, cover, and refrigerate until cold.
  • Strain out the stock and give the pan a good wipe. Heat oil in the pan over medium-high heat, then add bacon. Cook, stirring, for 4 minutes until nice and crispy. Transfer the bacon to a plate lined with paper towels to cool.
  • Rinse the lettuce thoroughly, pat it dry, and store in a breathable plastic bag in the refrigerator until serving time.
  • Dice the chicken into small pieces. Transfer to a spacious bowl. Drizzle Caesar dressing over the chicken and sprinkle bacon on top. Mix everything together well. Fill lettuce leaves with the chicken mixture. Sprinkle with parmesan cheese. Plate the lettuce wraps beautifully. Season with salt and pepper to taste. Serve and enjoy!
