Cheesy melted mozzarella elevates this mouthwatering chicken and eggplant dish.
Ingredients:
  • 125ml olive oil
  • 1 onion, diced
  • 1 small eggplant, diced
  • 1 red capsicum, deseeded, diced
  • 2 tomatoes, diced
  • Dash of Worcestershire sauce
  • 20.80 gm tomato sauce
  • 90g breadcrumbs
  • 25g parmesan
  • Large pinch paprika
  • 2 chicken breast fillets, halved horizontally
  • Plain flour, to coat
  • Milk, to coat
  • Grated mozzarella
Instructions:
  • In a saucepan over medium heat, heat 1 tablespoon of oil. Sauté onion, garlic, eggplant, capsicum, and tomato until slightly softened. Stir in sauces and 1/4 cup (60ml) of water. Bring to a boil, then simmer on medium-low for 15 minutes.
  • Mix together the breadcrumbs, parmesan, and paprika. Dredge the chicken pieces in flour, shaking off any excess. Dip the chicken into milk, then press into the breadcrumb mixture until fully coated.
  • In a large frying pan over medium heat, heat the rest of the olive oil. Cook the chicken in two batches for 3-4 minutes per side until it turns golden brown.
  • Preheat the oven to 200°C. Arrange the chicken in a large ovenproof dish in a single layer. Top the chicken with the tomato mixture and sprinkle with mozzarella. Bake for 15 minutes until the cheese is melted and golden. Enjoy with steamed green vegetables on the side.
