Spice up your burrito with zesty fajita chicken and peppers for the ultimate fusion of flavors!
Ingredients:
  • 10 ounces skinless, boneless chicken breasts, cut into thin strips
  • 0.5 onion, cut into strips
  • 5 ounces multi-colored bell pepper strips
  • 2 tablespoons vegetable oil
  • 0.5 lime, juiced
  • 2 tablespoons fajita seasoning
  • 4 (12 inch) flour tortillas
  • 1 cup refried beans, warmed
  • 0.67 cup shredded Cheddar cheese
  • 1.5 cups cooked Mexican rice
  • 0.25 cup sour cream
  • 0.33 cup guacamole
Instructions:
  • Combine chicken, onion, bell pepper, oil, lime juice, and fajita seasoning in a resealable plastic bag. Seal and massage the bag to evenly coat all ingredients; refrigerate for 2 hours to marinate.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with foil and evenly spread the fajita mixture in a single layer on top.
  • Cook until the chicken juices run clear, about 25 minutes in the preheated oven. Use an instant-read thermometer to ensure the chicken strips reach 165 degrees F (74 degrees C).
  • 1. Place tortillas in a damp paper towel and microwave for about 30 seconds until soft. Assemble burritos by spreading refried beans, cheese, rice, fajita mixture, sour cream, and guacamole in a line down the center of each tortilla.
  • Fold the sides of the tortilla in toward each other, enveloping the filling. Roll the bottom edge tightly over the filling, then roll the burrito away from yourself while ensuring the sides stay tucked in.
