Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, halved, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 500.00 ml shredded cooked chicken
  • 453g jar mild chunky salsa
  • 82.50 ml fresh coriander leaves, roughly chopped
  • 10 (250g packet) mini flour tortillas, warmed
  • 250.00 ml reduced-fat cheddar, grated
  • 1 avocado
  • 31.50 gm lime juice
  • Mixed salad leaves, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat half of the oil. Add onion and garlic and cook for 5 minutes until softened. Add cooked chicken and salsa, then cook for 2 to 3 minutes until heated through. Transfer to a medium bowl and stir in coriander. Wash and dry the frying pan.
  • Spread a generous 1/3 cup of the flavorful chicken mixture down the center of each tortilla. Top each one with a delightful sprinkle of 1 tablespoon of cheese. Roll them up perfectly to seal in all the delicious filling.
  • Heat the rest of the oil in a frying pan over medium-high heat. Fry the tortillas, folded side facing down, for 1 to 2 minutes on each side until they are golden and crispy.
  • In a small bowl, gently mash the avocado. Mix in the lime juice. Serve the flautas with the avocado, salad leaves, and lime wedges.
