Crispy corn tortillas stuffed with seasoned chicken, melted cheese, and salsa.
Ingredients:
  • 1 teaspoon vegetable oil
  • 0.5 green bell pepper, chopped
  • 0.5 onion, finely diced
  • 1 pound skinless, boneless chicken breast, cut into 1-inch pieces
  • 1 (1 ounce) package taco seasoning mix
  • 0.75 cup water
  • 1 (10 ounce) package corn tortillas (such as Ortega®)
  • 0.5 cup shredded Cheddar cheese
  • 1 cup salsa
  • 24 toothpicks
  • 2 cups vegetable oil for frying
Instructions:
  • Heat 1 teaspoon vegetable oil in a skillet over medium heat. Sauté bell pepper and onion until onion is soft, about 5 minutes. Increase heat, add chicken breast, and cook until no longer pink in the center, about 10 minutes. Shred chicken with forks, then add taco seasoning and water. Simmer until liquid evaporates, about 10 minutes. Stir in Cheddar cheese, remove from heat, and set aside.
  • Gently coat each corn tortilla with salsa. Spoon 2 tablespoons of the chicken filling in a line along the bottom edge. Roll the tortilla tightly into a cylinder and secure the ends with toothpicks. Repeat for the rest of the tortillas.
  • In a large skillet, bring 2 cups of vegetable oil to a temperature of 375 degrees F (190 degrees C).
  • Fry the flautas, a few at a time, in the preheated oil until they are golden and crisp, for roughly 4 minutes. Place the flautas on a plate lined with paper towels to drain. Remove the toothpicks and top the cooked flautas with the remaining salsa.
