Crispy buttermilk fried beef cutlets served with rich pan gravy, a cherished family recipe.
Ingredients:
  • 2 cups shortening
  • 1 pound boneless beef top loin
  • 1.25 cups all-purpose flour, divided
  • 0.25 teaspoon garlic powder
  • 1 large egg, beaten
  • salt and pepper to taste
  • 1 quart milk
Instructions:
  • In a large, heavy skillet, heat 1/2 inch of shortening until it reaches 365 degrees F (185 degrees C).
  • Prepare the beef cutlets by pounding them thinly with a moistened mallet or the side of a cleaver while the shortening heats up.
  • In a shallow bowl, combine 1 cup of flour with garlic powder. In another shallow bowl, whisk together buttermilk, egg, salt, and pepper. Dip cutlets in the flour mixture, ensuring they are evenly coated. Then dip them in the egg mixture, followed by another coat of the flour mixture.
  • Fry each cutlet individually in hot shortening until golden brown on both sides. Place them on a paper towel-lined plate to absorb excess grease. Save 1/2 cup of drippings in the skillet, discarding the rest.
  • Incorporate 1/4 cup flour into drippings to create a paste. Cook and stir over medium heat, while slowly pouring in milk until reaching desired thickness. Adjust consistency by adding less milk for thicker gravy or more for a thinner consistency. Season with salt and pepper. Pour over fried cutlets and serve.
