Chicken Fried Steak

Enjoy a Southern favorite: pound steak thin, bread, fry, and top with rich country gravy. Let us guide you through this classic dish!
Ingredients:
  • 4 pre-tenderized cube steaks (each 4 ounces), or round steaks
  • Salt, for seasoning the meat
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 2 cups flour, for breading
  • 2 teaspoons kosher salt, for breading
  • 1-1/2 teaspoons garlic powder
  • 1/2 teaspoon cayenne
  • Canola oil, peanut oil, olive oil, or other fat for frying
  • For the gravy:
  • 3 tablespoons pan drippings
  • 3 tablespoons flour
  • 1/4 cup heavy cream
  • 1-3/4 cups milk (a little more or less, depending on your preference)
  • Salt, to taste
  • Freshly ground black pepper, to taste
Instructions:
  • Preheat the oven to a low 200°F to prepare it for baking.
  • Tenderize the steaks: Place each steak between two pieces of plastic wrap and pound them until very thin, less than 1/4 inch, using a meat mallet, rubber mallet, rolling pin, or empty wine bottle. Remember to turn the steak over often and smooth out the plastic wrap. Repeat for all the steaks.
  • Season the meat with salt, then place on a wire rack over a baking sheet in the oven to keep warm and crisp while you prepare the gravy.
  • Prepare the breading station: In one shallow dish, whisk together eggs and milk. In another dish, combine flour, salt, garlic powder, and cayenne. Dredge each steak in flour, pressing it into both sides. Dip the steak into the egg wash, coat both sides, then dredge in flour again, pressing it in. Place on a plate and repeat with remaining steaks.
  • Fry the steaks: Heat oil in a large frying pan until it reaches 350°F. Coat each steak and fry for 2 minutes on each side until golden brown. Drain excess oil on a wire rack in the oven to keep warm. Repeat with remaining steaks and set aside in the oven while making the gravy.
  • Prepare a roux for the gravy: Turn off the heat. Leave about 3 tablespoons of fat in the pan. Whisk in 3 tablespoons of flour and heat on medium. Cook until golden brown, about 4 to 5 minutes, stirring constantly.
  • Thicken the gravy: Once the flour-fat mixture turns smooth and reaches a rich milk chocolate shade, gradually pour in the milk and cream while whisking continuously. Expect the mixture to thicken at first, then loosen as you incorporate more liquid. Adjust the milk until the gravy reaches your preferred consistency. To thin it out, add additional milk. If it's too thick, allow it to simmer longer. Season with salt and a generous amount of black pepper to your liking.
